You seem to be ignoring an entire back story. Guiding Sasuke to EMS was the way to do things given the circumstance. Itachi wanted Sasuke to not grow up not being ashamed of the Uchiha or having a hatred for the village from a young age. Both worked. Up until Sasuke was 16. Itachi's goal for Sasuke worked, just not as he initially suspected. He succeeded being the type of brother he wanted to be for what was going on at the present time. Naruto finished the rest of it and Itachi knew he could do it as well after the fail-safe for Tobi failed and the latter spilled the beans.

How could he do that if he randomly gave Sasuke his eyes? That would bring the entire facade of being a psychopath who killed the clan for the lulz into question. This wasn't an option given he didn't care just for Sasuke, he cared for the clan's rep (since this affects how future Uchiha living in the village would be perceived & Sasuke as well)- which would be destroyed if the clan truth was made known publicly, the village-which Sasuke would want to destroy any time he'd learn the truth, shinobi in general, etc.

Not only that, but how would Sasuke know to transplant the eyes? The fight was the perfect scenario to wittingly divulge that information so he wouldn't suspect where his true allegiances lie.

Madara realized that he was not ever going to be stronger than Madara, just continue matching up with him. Hence why during the war arc it's explained that during one of the many times the fight he was having with Hashirama was going nowhere, he had rigged his body with Izanagi beforehand, bit Hashirama during the fight, and we had his plan on from there.

They will still be strong, but not late-game strong except madara because he's from a era when most skilled ninja's are just naturally stronger than current era due to whole war experience. sasuke would need his curse seal power again to even stand a chance because he's a very aggressive fighter. itachi will be okay, he plays it safe with his genjutsu talent and has niche with water explosion clones. plus without MS he won't be chakra strained so fast and his ninja-aids will not be as much of an issue in battle. obito on the otherhand, i don't see a bright future for him. lol, but he seemed to of held his own against kakashi in taijutsu so i guess he'll be okay mid game atleast.
