You're talking to the right person, so stick around while I edit this step by step:
Final Fantasy 1 This was the big man's first game that saved him from being fired from making video games. Of course it's good! Except instead of being an "RPG", this is more like a "Saga". What is the difference? RPGs tell you where to go, Sagas do not. You're going to have a helluva time figuring out what the next sequence in the plot advancement.
The upside is that Final Fantasy 1 had the brave idea of letting you choose who you want on your team! Want four black mages? more power to you! There is also a quest for Ascension, which simply mean "your four guys get promoted and do much better, look different, like a sir".
Final Fantasy 2:
The big man decided that Saga wasn't the way to go, so he applies the RPG feature. The heroes talk, and the NPCs tell you what advances the plot.
HOWEVER.
Take one large trek in the wrong direction and you're going to be butt-touched by ogre mages at level 2. The difficulty of monsters varies depending on where you are on the map. This is okay, so long as you follow directions and don't stray off the path too much.
The gameplay is still very very brave. Your guys don't level up, they
train. This means your characters, after a certain number of fights, will gain a stat point in a given area. What does this mean?
You get to decide exactly how each of your four characters evolve by how you make them fight. How sweet and progressive is that? This was made in the 80s!
Final Fantasy 3:
I assume you're talking about the Japanese 3 that we Westerners never got. This is the game where it's both RPG and Leveling Up. The monsters aren't as hectic depending on location, so you won't be prone to deaths if you explore too far.
This game is where you first experience the Job system. If you played FF5, you'll know what I'm talking about. This is the game where FF5 got its inspiration. You start off with classes to choose from, but then later on, you get more classes unlocked!
Final Fantasy 5:
Same as FF3 in mechanics and gameplay. The storyline is tragic, but the dialogue between your heroes is comical. This is also the game where you face the high-strung, comedic, and fruity Gilgamesh. Not sure if you've heard of him or not.
But yeah! Play all these games because they are excellent.
