The ending of FMA was not bad. I really liked the plot of FMA but It feels like much different than FMAB though.

I believe brotherhood follows the manga more. There's things I liked more from each. For ex. The greed fight was better in fma but greeds story and character are way better in brotherhood. Plus he throws down against bradley

Loosely. Brotherhood follows the manga, the original not much, there's a lot of differences

Everyone keeps listing Fate/Zero so I'll put that on my list along with Drifters, Basilisk, Brave 10, Blast of Tempest, Shinsekai Yori. Those all looked good in the trailers.

I usually don't mention it cause most people here don't seem like car people, and some "hardcore" anime fans I talk to don't take to it very well. I've seen the first remake so far and i thought they did a great job, it was like watching stage 1 with the animation/effects of stage 3 and 4. Other than the 2nd and(I think they're doing 3) 3rd remakes I've seen everything from the battle stages to the live action movie. It's in my top list of animes for sure

Preferably check out "Hellsing Ultimate" instead of "Hellsing". Ultimate is pretty much a remake of the original, but with better graphics and stuff.

Since someone mentioned Drifters, I would like to point out that both Hellsing and Drifters are made by the same author. On top of that, the animation style and the music in Drifters are so similar to Hellsing. So, if you liked Hellsing you will most definitively like Drifters and vise versa.
