Every villain has a quote, Nagato talked about the cycle of hatred and how it defines the world.
Madara talked about dreams and how reality is painful and the solution is to create a dreamworld.
And Itachi talked about how reality is deceptive, how things are not necessarily at all what they seem.

Now I'm gonna try to de construct his quote.

First of all, what does he mean by "People live their lives bound to what they accept as correct and true"?

One way of interpretating it would be scientifically, if we discover something to be proven we start to accept that that proven thing is real and we build on top of that right?

If we can't prove something then we don't bank on it and we move on.

But maybe it could have another meaning, being "correct" can be about opinions not just facts, they can be backed up by facts that can be considered true.

If we find an opinion that seems "correct" then we adopt it as our own and we make our decisions based on that opinions.

For example, it was known that Itachi was a criminal and a cold blooded killer so Sasuke made it his destinty to destroy Itachi because of that.

In his mind that was considered correct and true.

I guess.

"..that's how they define reality, but what does it mean to be correct and true? Merely vague concepts, their reality may all be an illusion".

So what does this second part mean?

Even though it was conisedered a reality that Itachi was evil.

Sasuke would later come to change his mind about this, maybe he was evil, maybe he wasn't, but the point is what he thought was real turned out to not be what he believed in after all.

Whether or not Itachi was objectively evil is not relevant, Sasuke came to think one thing and then his world view changed.

If scientsits discover new evidence or that they made mistakes when gathering the proofs first, then they have to accept what they beleived in all of these years were lies. Even though they were presented as the opposite.

After the "reveal" people came to believe Itachi was good, and that Obito was Tobi, but really Tobi might have been Madara, and Itachi might have been evil all this time anyway.

What we accept as real could be a lie.

"Can we consider them simply living in their own world, shaped by their beliefs?"

What does this part mean?

I think, that because we live at the risk of being wrong all the time, we don't actually live as correctly as we may think we do.

For example, we can be famous and very powerful people but then someone tweets about disgusting *** acts you did and you become villified and your life is over.

Or perhaps you tweet against a powerful and respected person but instead of being a whistleblower you are sentanced by a court for slaundering a persons name.

Even if we try to be good people or smart people or whatever.
In the end we are never 100 percent guaranteed to be right are we?

The world changes throughout history and what you think is right may change as well.

It may change so much that you become a hypocrit for following that trend.

In the end maybe when we try to be correct by following known truths or we try to be good people by following proper standards, maybe we are just lying to oursevles we are actually good and right.

Maybe good and right are concepts that are never set in stone so really it's impossible to 100 percent be good and right.

I think Itachi hinted at his deception to Sasuke it must have been painful to live a lie.
At the time, Sasuke believe Madara was died, which prompted Itachi to philoshize about questioning one's Reality. The greater question is "what if everyone believes something is true, does that make it true?" Part of your analysis touched on that which I thought was really interesting.

itachi is dumb??? no of course he isn't...

itachi is clearly saying tobi is madara and he is one who sluaghtred uchiha...but sasuke don't believe tobi is madara considering madara must be dead...

itachi then confirm to sasuke that tobi is indeed madara and that madara is very much alive...but again sasuke wouldn't believe that...

THEN ITACHI SAID HIS AMZING THAT KOTE ....

what is teh illusion itachi is talking about??? ITS TEH BOBITO REVEAL CUZ ITS A FAKE REVEAL...cuz teh mystery of tobi is not over

what is finall truth ?? teh final truth is masked tobi identity to be uchiha madaara and when that finall truth time comes, teh bobit reveal will turn into a mere mirage and illusion..

moral of story :reality is full of lies one should be able to see throu reality's lies ..

-all pipole who belived tobi was bobito were just victims of kishimoto's illuzion cuz tobi true identity is indeed madara..
