i dont wanna be that guy, but is there any explanation as to how Itachi is reanimated with his eyes and all of his visual jutsu if sasuke had itachis eyes implanted to gain EMS, or is that just a bit of a plot hole?

No, it wouldn't. Any permanent body damage and physical limitations the people, used as Edo Tensei, had when they were still alive, is still retained in the Edo Tensei. So Nagato still wouldn't have been healthy because he was already sick by the time he died.
Like someone already pointed out, Itachi's eyes were removed after his death.
It's still a rather confusing jutsu :/

@Kakazu's Earth Grudge is a forbidden technique not a KKG. But did Kakazu had his extra hearts in his Edo?
@Kin and gin was even physically altered (See the whisker marks) along with their chakra due to eating Kurama flesh and staying inside Kurama's belly. Only their chakra nature and reserves was dramatically changed. Which is possible the natural way too (Remember: Sasuke's chakra is now 'darker', and everyone can increase their chakra reserves)
@But also note that, the othet jinks didnt actually have their beasts in them, they were in the Gedo Mazo and Tobi just resealed them in their hosts and recalled them when the beasts went out of control.
@ Kakazu didnt have skin rashes inflicted by the Rasensuriken at the moment of death, Diedara's actually didnt have a body at the time of death nor was his arms sewed as in VS Sasuke nor Sasori was a puppet as at the time of death, he was in fact a real Human in his Edo form.
@ Elder Chiyo, third Raikage etc was not at their prime.
Thses all makes me conclude that Edo uses DNA materials to form the basic structure of the body and the spirit (The ghosts in 591 had the same look as the moment they died) shapes the body and decides the chakra, memories etc.

Kakuzu was shown collecting new hearts so no he didn't have them
And of course The Edo doesn't bring them back like the second they died, or else they would be useless because of a permanent lethal injury -_-
It brings the back how they were moments before the final blow was applied
