If she get caught inside the water doom there is no way she can escape because she is not an expert swimmer, unlike Kisame. She can not spit lava inside the water because she will harm herself too. Kisame can use his Great Shark Bullet Technique that absorb the chakra from an opponent's technique and in turn, use that chakra to grow larger and more powerful.

Her lava doesn't harm her. It's shown that.

I'm thinking since it absorbs chakra, just don't attack it. Maybe she could counter by using the shark as a water tech.

Kisame cannot use the technique (or his other major Suiton techniques for that matter) unless he's around a very large body of water. It's common knowledge that high-level Water Techniques require the user to be around a large body of water. He was only able to use his Giant Shark Missile (and his 1000 Sharks) against Gai because they were on the Turtle Island which is...in the middle of the OCEAN. Even if Kisame creates his lake it's nothing like an ocean. The more access to water you have, the more stronger your water techniques become.

It's also a fact that Earth has an elemental advantage over Water.

Now you may bring up Kisame's fusion with Samehada. Bee had no idea Kisame could even do this which means he had no possible way of foreseeing it or preventing it. Mei, on the other hand, being the Mizukage would be aware of this the moment the battle begins. Even Chojuro knew this because he's a member of the 7 Swordsman. No Kage who has intel on Kisame's fusion with Samehada would let it happen. Every single Kage has the ability to see into a situation and make assessments. That's largely a what a Kage does as head of their respective villages - they are no fools.

In a vs thread, we only go by what we have seen so far, speculation is irrelevant.

With samahada he can heal himself.
