Itachi
Itachi has been known to have low chakara reserves. But that is questionable because we have only seen him in a full scale battle once( Sasuke vs Itachi ) and even during that battle his intent wasn't to kill also that was his chakara reserve when he was really sick. He was at a point where he was coughing out blood. You could compare this to Hiruzen in his prime and the time he was facing orochimaru. People know that hiruzen in his prime had alot more chakra and was aot more agile. However imo itachi was in a state where he was even weaker than being at an old age. Tobi stated something along the lines of " itachi was very sick and ill, every day he took medicine to prolong his life but in the end that was not enough". So itachi in his prime will have considerably more chakara. In the data books he also had a 5 in speed and taijutsu. He also has a level of intellect and can analyze's any situation to its full extent even at the most worst of time's. His base speed is in top 10. He has the sharing/MS which enhances his vision it also enables him to use amaterasu, tsukuyomi and susanoo
Now this is how he will deal with the each of the 5 kages. It is also how the 5 kages will deal with itachi. I understand he is facing all 5 at once so one kage could aid another where they lack. So this could also be the key to defeating itachi and countering his abilities.
Tsunade
Sword Of Totsuka will seal her she dosen't have speed to avoid and she dosen't have long range attacks to stay out of its reach. Amaterasu she dosent have speed to avoid it. Genjutsu She does not have a counter to genjutsu in the Manga shown so far He can also cast genjutsu with his finger or if neccesary Itachi's can use tsukuyomi . Also she wont be able to penatrate Susanoo either.
Mei
Mei has shown S class ninjutsu. She can also use 3 chakara Natures which are Fire, Water and earth which allow her to posses Kekkei Genkai which are vapor style and lava style. Her vapor style was able to melt an incomplete version of susanoo however i have doubts whether it can melt a full/complete susanoo. However with her current feats shown she still cannot avoid Amaterasu . Genjutsu She does not have a counter to genjutsu but their is a possibilty of her using the same technique Zabuza used in the Manga ( Hidden Mist technique ) to stop his line of sight however itachi can still see her chakara due to his sharingan .Itachi's can use tsukuyomi which will leave her in a mentally diabled state . Also she wont be able to penatrate Susanoo either.
Garra
Garra with sand can block amaterasu . He can also use his sand to sense his movements and to avoid eye contact which was shown when he used this against Muu . He could also with the help of tsuchikage who will lighten his sand and get under his susanoo. This was the same tactic used against madara. He is perfect to avoid the Sword of Totsuka because most of his attacks are long ranged based. But itachi could cast KA on the tsuchikage and it could complicate things.
Tsuchikage
He has the ability to make things heavier and lighter at will as long as he has come in contact with them. He also has Dust tech's and has the ability to fly.
Genjutsu He has no counter Amatersu I dont think he can fly fast enough to avoid it Sword Of Totsuka this is a considerably fast technique and i don't think he is fast enough to avoid. Susanoo I dont know whether his dust tech's can penetrate susanoo this is debatable until proven via manga.
Raikage
He is mainly based on taijutsu and his speed but dont get me wrong this is simple but effective. If itachi does not have susanoo he will cause big problems because he has has the ability to instantly kill his opponents . His chakara reserves are near bijuu levels so chakra isn't a problem. Amaterasu He is fast enough to avoid it and other than him and gara in the 5 kages has shown feats which are able to counter amaterasu. Genjutsu The rumor's of raikage's having the ability to counter genjutsu is not plausible untill proven in manga so he is still vulnerable as of now Susanoo He cannot get through the defenses of susanoo which he admited himself. Only with the help of tsuchikage is able to penetrate susanoo. But i doubt he can penatrate through the yata mirror.
I have tried my best to list most of the the pros and cons that the kage's have to be able to defeat itachi as well as vice versa. If i have missed anything plz correct me and i will edit my post.
