But I'm insisting on betting on Itachi turning into dust when Kabuto cancels the technique.

He's conscious, can't be controlled, but is still an Edo Tensei.
As for why Kabuto didn't summon Itachi back as soon as he lost control over him.
First of all, he might not have the ability, now that he can't control Itachi.
Second of all, why would you summon a man who has the perfect skills to be able to end your technique to your side?

It's not that easy to summon boss Edo Tensei's. Kabuto must have spent years harvesting the required DNA and human sacrifices. He even commented on the trouble he went through.
Sure, if what I claim will happen, happens (Itachi making Kabuto release the technique via Sharingan and then turning to dust, leaving Kabuto alive) Kabuto will be able to collect the samples again and try his luck with Edo Tensei another time. But the sole reason Kabuto created his army was to trade his support in this war in exchange for Sasuke.
Kabuto doesn't need this army. He's an introvert.
He doesn't like the spotlight. I doubt he'd decide to take on the five nations after the war with a new Edo Tensei army. He has no reason to do so.
I know Edo still has the Edo appearance, but he doesn't follow the laws of Edo Tensei anymore. So he can't be controlled through it, and he cant be unsummoned.
Breaking from Kabutos control doesn't seem to be that big of a feat anyway, Hanzo manged to do it for a while through sheer will power. But breaking out of Edo Tensei is a very big feat. Which is why Koto is noted to be the strongest genjutsu ever, not the best. Even Kabuto was surprised it managed to break Edo Tensei.
Tobi said he will hand over Sasuke once victory is assured, so Kabuto is going to have to give it his all in the war if he wants to get Sasuke. And that was his reason for joining with Tobi in the first place.
Going by you theory, if Kabuto doesn't need the army and he can't unsummon individual Edos, Kabuto can easily unsummon Madara + Itachi + Mu to assure his safety. That would be the smart move to do, knowing Itachi who can easily put him in a genjutsu, is after him.
Kabuto never imagined in his wildest dreams, that someone would be able to break Edo, or that Itachi had Koto. Infact, he probably didn't think Koto would be able to break Edo Tensei, since he wanted to ressurrect Shisui. Which is why he said "Itachi is on a whole nother level to the rest". I am sure none of us saw that coming either (well I didn't at least). Kabuto himself thought Edo Tensei had no flaws or weaknesses so he would have felt pretty confident ressurrecting those powerful ninja's (who have the ability to end Edo Tensei if they werent Edo's).
