Imo, the best flashbacks are the ones that either develop the story or an important background information. I dislike the pointless ones that happened either an episode ago or a chapter ago.

Jiraiya's tale. Lee's hard work gets on my nerves the most (along with Naruto's as he is the main character and we have seen it so many times before) but my favorite scene in the anime is his drunk taijutsu.

My favorites are any flashbacks that deal with Naruto and Sasuke, Itachi's sacrifice, Lee's hardwork and determination and anything that relates to Jiraiya in the slightest. 'Cause he was cool. Kukapow.
