Kakuzu would be to fast for Hidan to actually catch him, and Kakuzu is much smarter.

Hidan needs Kakuzu's blood to kill him , Kakuzu can harden his body , which means no blood and Kakuzu has 5 hearts which makes Hidan almost impossible to defeat him and Kakuzu > Hidan in ninjutsu since he knows all elements , so i would go with Kakuzu
