Itachi that has been observing your moves all the time, notices the snake hand seal which is usually related to Earth release, immediately scanning the area for any changes just in time to see the corridor rise around us.
Itachi: Kisame, he is using an earth release technique!
He then yells at Kisame to end his Water technique and alert him from any incoming attacks and Itachi's counterattack. They both stay in safe distance from the rising rock walls knowing that you can convert stones into lava anytime. As Kisame hears Itachi's advices, he immediately grabs samehada, draws it with both hands and gathers water all the water in the corridor around it while continuing the swing, with one overhead slash he sends the Water vortex crashing into the corridor wall just a little before the corridor had fully formed in front of both of them and direction you were in when we started. As the Vortex around the water is formed, Itachi keeps his distance from the water vortex and anxiously waits to get out of the corridor as he breaks it.

The Corridor around shatters from the hit as the vortex keeps on going, eventually hitting your quicklime which will get mixed with the vortex and be thrown back at you before it hardens, since you haven't moved from the spot we started from and the vortex extends all the way there. Meanwhile, immediately as the wall's broken, Itachi jumps to 2 o'clock from kisame, almost to your left and exhales a fireball which will clash with the incoming Quicklime vortex on the spot you are in.

Notes: In my opinion, quicklime wouldn't harden fast enough to stop the vortex and it wouldn't get attached on samehada since the vortex's spinning towards you, carrying most of the quicklime towards the head of it.
0:15 is the technique. I perform that without the jump and just swing my sword once over my head.

By the time he swings his sword at me and Itachi spits his fireball, my clone quickly grabbs my arm and sends me back, performing a diagonal (backwards and to my left side), so that i'm right in front of Itachi, but long-range from both of you.

Itachi: Hmph... Why would someone like me waste tons of chakra with someone who can't even see the truth with their eyes? Fighting isn't about having the best technique, fighting is about knowing your limits and saving chakra for right situations.
As the Jaw is created, it will let out quite a noise that causes Kisame to watch behind by reflex seeing a giant jaw of earth hit him on his back while he is mid air (bolded) which won't cause much damage. While continuing jumping backwards, you're caught off guard and Kisame has the element of surprise as Itachi closes his eye that starts to bleed once itachi closes it and opens it, unleashing a torrent of black flames on your body while Kisame jumps backwards, almost as if he knew what his partner were thinking.

Roshi looks to his earth jaw and sees kisame isn't there anymore, meaning he disappeared, being the underground the only place as he is nowhere to be seen.
Tough Itachi jumps to avoid the geyser, he still gets hit by the drops of lava which come down all around the place where the lava erupted from, slightly damaging him.
As the lava geyser blocks Itachi's path and Roshi continued to run so he managed to be in front of him, the geyser momentarily blocks Itachi's vision of Roshi. This allows him to notice Kisame emerging from the ground, mid range from him with samehada.

As soon as he throws the Kunai, he notices Itachi jumping back and already making one hand seal and closing his eye. Roshi recognizes the technique from the myths and immediately makes half of a dome to appear at his side, covering both him and Kisame, while running around Kisame. He puts himself on a position so that Kisame would stand between himself and Itachi, while the dome gives protection to both of them (Roshi and Kisame)

The fireball, also gives me some protection as we seen in Sasuke's fight against Itachi, where his fireball could hold amaterasu for a moment. If Itachi continues with the Amaterasu, due to the fireball, i have time to see it and defend myself properly.

As Roshi says this, he goes Incomplete Biju form (i guess this counts as a move). He appears to have changed drastically, with an evil smile on his face
Incomplete Form
When the incomplete form is activated, Roushi is covered in a bright crimson chakra shroud with four tails waving behind him. The chakra shroud burns an opponent who touches it, much like fire. It is hotter than the Nibi's chakra shroud. He gains a +10 attack boost to the Lava element, and a +5 attack boost to the Earth and Fire elements.

One stabs Itachi in the stomach, while the other two grab him by the arms and push them apart, literally ripping them from Itachi's body. Each of the arms, grabs Itachi's limbs and neck and also stabs him all at the same time.
