Take bleach for example, if you look up on later episodes, one character always used a bow and arrow, but for one fight he pulled out a sword and used it as such for the entire fight, until he was ready to finish his opponent, then he put it to his bowstring and fired it. A sword, reguardless of what its originally meant to do, is still a straight pointy ended object which, given the strength can be shot like an arrow. this is a joke...LOL.....but truthfully it catches my thoughts and made me laugh....I haven't read the whole topic but... my guess Susano'o is that it's shape depends on persons character, but still what I am not that sure about it, since I compared it mostly on manga pics (where is just few of Itachi's Susano'o's pics in skeleton and human-like form)
But comparing the looks of that human-like form (not cloacked) of Itachi's and Sasuke's Susano'o is the basic of my opinion which I am too lazy too dig out and confirm myself
Itachi's Susano'o is that of calmy looking woman (at least for me it looks like calm female)

...and I haven't found pic of Itachi's skeleton-Susano to have such a grin but that may because there's just few of them, not showing it very well.
But the other thing showing the difference in character are colors. Itachi's has red color while Sasuke's has more evil looking purple color, but I guess you must compare colors yourelf, since that description of mine sucks like hell
As for weapons... well, here my guessing ends, since I can't find any symbolicizm. Maybe it's because Itachi wanted to protect what he loved, so he got Sword with great sealing powers and strong Shield to protect them from attacks and since Sasuke wants to shoot everyone around, he got just bow![]()
