If you wouldn't mind me asking which part of the world are you from ??
OK here we go
- 2 cups of cooked rice (Not arborio rice, an Asian rice you can by this from and Asian grocery store or even Basmathi rice could be used)
- 1 small or medium Carrot, cleaned and cut in to julienne
- 25 - 50 g of Chinese cabbage or normal cabbage
- 1 stick of spring onion
- 1 medium size egg
- 50 to 75g of chicken (breast preferably) cut in to small bite size bits
- 1/2 a shallots or an onion
- 1 clove of garlic
- light Soya sauce
- about 1 tsp Miso paste
- salt and pepper to taste
- about 3 tbl spoons of oil of your choice
Cooking Directions:
Heat a pan and add the chopped onions and garlic and sauté it till the they a lightly wilted, then add the chicken season this and add a little bit of soya sauce (1 tbl spoon) and cook till it's done. To this add the Carrots and the Cabbage and cook and the Misso paste.
Now break the egg in to the mixture and cook it through (make sure the egg is cooked right through not runny ) and now we add the rice mix all of this together, just before you finish cooking at the choped spring onion add the another 1-2 tbl spoons of soya sauce correct the seasoning and serve.
Beware:
- Make sure you cook the chicken right through no pink bits
- Miso paste and Soya sauce are already salted so be careful when you use salt
- Wait till it cools down to pack it, when it cools pack in to a lunch box and chuck it in the fridge take it just before you leave and zap it in the microwave for about 2 minutes before you eat it
