For many reasons. When used properly, do not lose your eye, it can be used to create anyting from nothingness. You could create your own body and then transfer your soul to a new body, like Orochimaru but better. You could use Edo Tensei to bring back the souls of fallen comrades then use Izanagi to make their bodies whole again. Yuu could use the Shiki Fujin to kill anyone then use Izanagi to not die. With all this power wjy isnt the sage of the six paths still alive

i think there are limits of what u can do with it, cause if it was that simple, why would madara wait countless years to invoke his plans? when he can just use izanagi to do whatever.
I think the sage died of using all his chakra reserves while seperating the juubi into nine beasts and so, simply didnt have enough energy to spare to use izanagi

Izanagi is powerful as hell, and I'm glad our current main villain, Madara has it. However, don't forget the fervor when saw Itachi's Susanoo and everyone went crazy about it. Every jutsu has a drawback, but we haven't seen this one's yet. Madara never tells anyone everything even when he kills them, unless Kishi kills us, lol.
The sage didn't die because he used all of his chakra when he turned the Jubi in the 9 tailed beasts. As the myth says the sage was already about to die when he came with the plan to "kill" the Jubi since he knew that his dead body couldn't hold the beast back
