Depends on your personal tastes. If a timid girl like Hinata were on the team I would not have liked the manga as much
Of course if Hinata stayed timid the entire time, it would have been annoying. However, Hinata's story arc, before she was made into a pairing fodder, was about her becoming more confident in herself and becoming stronger. Due to her being a side character, this was largely ignored and done off panel, but we still saw how she grew as a person through moments like confronting pain, after Neji's death, during the Last, or when she attempted to rescue Naruto from Momoshiki. If she were to have been a main character, her story arc and development would have naturally gotten more screen time. The fact that you still call her timid when she is no longer like that is proof how badly her character was ignored.
Hinata would've been even worse as a heroine if she's such helpless girl like sakura who will just be overshadow by the male character especially know how clitche when Timid girl and rowdy guy always ended up together. It's gonna be bland as f***. I would like to see Hinata being savage asf when she gets some mental breakdown.
Even if we were to assume that both Sakura and Hinata were
not overshadowed by Naruto/Sasuke and got just as much screen time and development, Hinata would still be the better option. This is due to the fact that Hinata has her own story to go through (Heiress of the Hyuga), whereas Sakura's revolves around the two other main characters (Being Hokage and Killing Itachi), Hinata has MANY very obvious similarities to both Naruto and Sasuke, the former's being pointed out in the manga, whereas her similarities to Sasuke are abundant in her past and relationship with her family, whereas Sakura has absolutely no similarities, and Hinata actually has an interesting fighting style that could have gradually developed alongside Naruto and Sasuke's unlike Sakura, who went from holding kunais in battle, to healing, to punching, to punching really hard. The Gentle Fist style would have provided for a far better fighting style development than that. Hinata's personality is also far more compatible with both Naruto and Sasuke's, whereas Team 7 with Sakura was just a mess.
Another point is that Himawari doesn't really take shit either. When Boruto tried to pry away her toy, she fought back, and when he broke it, she got pissed off. Another thing you don't see in Hinata's character: Standing up for herself, getting angry when someone does something to you that you do not like, and hitting people who piss you off.
Hinata never really had any opportunities to show this tbh. Sure, there was her cowardice during her fight with Neji,but she overcame that with Naruto's help. After that, she was never put into a situation where she'd have to stand up for herself, at least not ones that could directly be pointed out.
You also have to consider that a person's personality doesn't really change much once it's established. Look at Sasuke, he's still cold and a loner despite no longer being a brooding revenge-seeker. It's because, like Sasuke, Hinata's past shaped her personality, and with the way her family treated her, its to be expected she'd not be as angry as Himawari or confrontational.
Although, being angry and aggresive isn't equivalent to fighting back when the going gets tough, as shown with Sakura or Choji (initially). Hinata on the other hand, calmly plucked Hanabi's eyes out of Toneri's head and faced off against pain. Sure, she's not being aggressive, but that doesn't mean she wasn't fighting back. Not everyone needs to scowl and let out a battle cry when they're standing up for themselves or others.
And I personally prefer Hinata to be that kind of calm and cool-headed person since it far better suits her character design, fighting style, and backstory.
