Not really, it is true that the senjus dont have any kekkei genkai but they knew a lot of jutsus, that is why they are calles the clan of the thousand pillars. Databook stats that the senju clan are very good at genjutsu, taijutsu and ninjutsus.

And not all the Uchihas have Itachi or Madara's level. All those clans are cans who fight but the Uzumakis not only fight but have the greatest sealing jutsus. I think they are stronger.

The Uzumaki Clan was wiped out long before the Uchiha Clan was.

On that note, Danzou wanted to eradicate the Uchiha, but he wanted to do it silently. So that's where Itachi (and Obito) come in. Plus I doubt that the entirety of the Hyuuga Clan could defeat the Uchiha Clan by themselves, unless of course they attacked when they were defenseless.

You're not getting the point are you ? Let me simplify, Hiruzen wanted peace, no fighting. If Hyuuga stepped in = civil war, which Hiruzen wouldn't tolerate. Since Itachi followed Hashirama's will, and being a uchiha, it was more convenient to do the assassination.

The decision was Itachi's, since he insisted on doing so (under direct influence of Danzo). You should realize that no one can predict the outcome if there's a battle between those two clans, because Naruto is mostly a non-linear story line. Its up to Kishi's will.
