(clarification) Whether clones increase mission more success as opposed to whether healing increases mission success more is a fair question, that has no obvious answer as there are no statistics to it.

Not to mention he probably has the best grains ready just in case there is an aerial attack on the village so you are ignoring the prep he has. The only thing Gaara has over Katsuyu is flight. That makes it overall more useful than Katsuyu.
Katsuyu can locate invisible opponents and opponents that are hiding. She liquefies across the battlefield and Tsunade can tell where the opponent is. Katsuyu can be all over a battlefield, Tsunade will always know where an opponent is.

Nextly, I would like to start by pointing out that as I stated in the comment that launched this debate Gaara is at the peak of his game in a desert or in Suna.
Yes, but if you measure the usefulness of sand platforms against say the usefulness of a a slug who can liquefy and heal an army while they fight, I think sand platforms find themselves as net less useful.
You're argument that his sand is more useful do the the fact that he can create Sand clones is interesting. Considering Kakashi can create Raiton clones which are significantly more useful. Or Hashirama, Madara, or Yamato can create wood clones again much more useful. The sand clones are no more useful than Suiton Clones, and as far being able to mimic his support, he managed to use an academy level transformation jutsu. How does that make the sand more useful?
Your note on healing is silly because we're discussing Katsuyu and not a medical ninja. So she doesn't actually need support to get to her patients as she's the most indestructible creature we've seen in the NV. As we saw per the War, and Konoha invasion arc, it is far more likely that shinobi will be injured than outright killed immediately. Add to that, the idea that it depends how quickly one may die from a wound. A fatal wound that takes minutes to kill can be healed and addressed.
But now allow me to suggest an even greater purpose for Katsuyu which Gaara's sand stands to provide no usefulness for, genjutsu. One can be awakened from Genjutsu through having chakra poured into their chakra network. Katsuyu's divisive abilities allow her to be placed on any and every member of a team. She draws chakra telepathically from Tsunade and Sakura's Yin Seal. Allowing access to pools of chakra that she can push into any given body, she is essentially a tool that stops genjutsu in its tracks. Because she channels Tsunade's healing abilities, and Tsunade effortlessly healed two Tsukyomi victims, she could even heal any damage done by genjutsu.
Now to talk about sensing, Katsuyu can sense chakra. Even when those who the chakra emanates from/around is unaware of it. Making her a incredibly valuable asset in the field if enemies seek to use cunning or clone feints.
Actually name one move of Gaara's that doesn't ultimately come back to him winning through crushing an opponent. That is his end goal in every fight. I suppose he does try suffocation too. Those are his tools, the intermediary steps aren't actually important to usefulness as offensively his goal is to cover the opponent in sand and to either suffocate them or crush them. Feeling that it doesn't match the complexities of his style is fine, but even you have to admit that those are the only things that logically and that we've seen him do that can actually seal the deal especially against upper tiered opponents.

But you're analogy was incorrect because you used a child as an example. Katsuyu has been hyped to be of legendary status. Not that of a child. She has been hyped to have the offensive capablities necessary to kill Orochimaru. She has displayed defensive capabilities strong enough to save thousands at once. She's displayed support capabilities that has allowed her to heal tens of thousands. She has all capabilities necessary to completely neutralize genjutsu as a viable means of attack. She can sense even faint chakra. And relay information instantly all across the world. And she's the child in your metaphor. Well I'd certainly like to see Gaara play support to thousands simulateously. Or to effectively neutralize genjutsu without his team needing a medic afterwards. His saving of Suna corresponds in scale with what Katsuyu did in Konoha. She's not the child if you insist on the metaphor.

That's point two. Point three is that she has in the time to took the rhino to charge the interrogation building, she managed to come from nowhere and encase all the shinobi in the room. Point Three Now I want to point out I have already named one way in which almost any opponent is outmanuevered because of sheer number and lethal ability of Katsuyu. She can encase an opponent and having deadly medical ninjutsu transferred through her killing whatever enemy is stuck inside. That's point four. Point 5 Food Cart Destroyer.
Now that's three separate ways Katsuyu can kill and do so effectively. Against even jounin. She has the offense that puts her at top tier summons.
Defensively, CST outranks C3. The destruction caused by CST gives a pretty clear implication it literally caused a crater in the middle of the hidden leaf, and it turned everything outside the crater into rubble. Compare this with a normal Shinra Tensei that had the force to beat all three of the Large Toad Summons. This is a Gamabunta who took one of Shukaku's elemental blasts, being rendered useless by an ordinary Shinra Tensei. Thus, to protect the citizens inside of her necessarily, Katsuyu needs to be incredibly tough and durable.
Gaara's automatic Sand defense can be penetrated by speed, force, or raiton. Of the opponents Gaara is likely to encounter, they are will probably use one or the other. Gaara's strongest defense pales before Yasaka Magatama. It would be blown away by CST. It would collapse against Ay or Tsunade. It would be disentengrated against Oonoki. It would melt from Mei. Kakashi would Raiton right through it. Kisame would flood it and make it heavier and slower. You'll note that Gaara has not relied on his automatic defense since the time skip. Afterall, Kimmaro's bone bullets almost had the force to make it through. That's not to say his manual sand defense isn't strong, but the automatic one wouldn't sand up to the attacks Gaara would be likely to face. It's not even worth mentioning.
Also Pein would not have had any trouble against Gaara. None. Don't even say something that stupid. Asura path and Animal Path would have had Gaara scrambling. And If Gaara had gone to try and fight the paths individually as he started to locate them, the Deva Path at any point in time could have launched CST and wrecked everything. Sand can't cushion against that, at best there would have been a massive sand storm as a result. If Gaara had gotten captured by Preta Path like Naruto had, it would have been game over.

From the sand he is himself carrying, he grinds the rocks and minerals from underground into an homogenous sea of sand and manipulates it like a tsunami that engulfs absolutely all things in his line of sight!! The problem with the manga scan you provided is that you posted page 19 of chapter 215, but the jutsu activation starts when his sand begins to break down rocks. But Gaara started fighting in chapter 212. Giving him ample time to create a sea of sand.
It may eradicate through burning or through concussive force. Its fully possible that fire does harm to Katsuyu but its also manga fact that Gaara's sand can begin to melt (who knows at what temperatures though, Amateratsu is at least hot enough). There are some things that logically increase or decrease with age. Strength, speed, reflexes, agility. I'm just trying to find out why you think sanding down rocks for some reason gets a boost because Gaara was older. Especially at this is a skill he never needs to practice in Suna, which he rarely leaves as he's the kazekage.
As I stated before whether or not Gaara's sand has a Katon weakness is unimportant. It has three other ones that are glaring enough.
Now, we've been at this for about 3 and half pages or so. People keep saying Gaara's sand is the more versatile thing. However they consistently cannot do a logical comparison of the abilities the sand has displayed and the abilities that Katsuyu has displayed and come to the conclusion that the sand is more versatile. Rather what we've seen is a one sided argument saying look at everything Gaara's sand can do; obviously it must be more versatile than Katsuyu. I will grant you that we could talking past each other. By versatile I mean how many different things can you do well, it would be possible for someone else to mean the number of ways one can accomplish one thing. For instance Gaara has a number of defense techniques to result in the same idea. He has his sand armor, and his sand shield, and shield of shukaku, and his sky sand defensive wall, and his Mothers sand shield. Some may consider this a versatile array of abilities, I see it as simply a progression of a sand shields thus I only take note of the strongest one as they do the same job, and they do it in the same method.

Gaara can create Sand Clones to assist him in battle

Gaara's sand is more flashy, but nothing backs up your claim that its more versatile. And certainly not that it's more useful. Healing and Information relay alone contend for usefulness. Being a healing pad for an army and relaying helpful information during missions or on various parts of battles more than proves her usefulness out weighting that of Gaara's sand. Add in offensive and defensive capabilities and it really shouldn't be a question of what has more utility.
The sannin's summons are legendary creatures. They are renown separate from the renown the sannin have. They have power above that of a jonin. It's why Manda can threaten to eat Orochimaru, why Gamabunta has such a complex relationship with Jiraiya. They are incredibly strong creatures. It's why Gamabunta was used to hold down the 9 tails, and why he went toe to toe with shukaku. 5% of Katsuyu is what it takes to create the legendary dead lock of power for the summons. Creatures that are summoned to fight against bijuu shouldn't be underestimated. If you took Kurenai, Asuma, sixth hokage, Kiba, Neji, Hiashi, Chouji, and Chouza, the Naras and put them against one of the legendary boss summons, they would have quite a difficult time.

Easy =/= instantly. For instance, I can easily grow plants, that doesn't mean the minimum required time for them to grow and bear fruit is reduced. It is easy for me to make mashed potatoes from scratch. That doesn't mean that the potatoes will be mashed instantly, there is still a process than must be undergone. It may be easy for me to dig holes, it doesn't mean easiness erases that it takes me time. I can easily write papers or responses to things, it still takes time. It may take less time than if it were arduous, but that's not because it being easy makes it takes less time its that difficulty increases time.

To make the Shield of Shukaku, all Gaara would need to do is manipulate the finest and strongest grains of sand that he had already created. This raging sea deals a lot of damage by itself, but one can further take advantage of the sand for a second and a third consecutive assault! That sublime succession of sand attacks has this jutsu as its starting point!!

To make the Shield of Shukaku, all Gaara would need to do is manipulate the finest and strongest grains of sand that he had already created. Nothing absolutely nothing supports your claim that he needed to predict that attack.
As he already stated "from underground I collect the strongest minerals." How could he do that if his sand wasn't already underground?
