I'm confident by the EoS Luffy will command a/some ancient creature to help him in his final battle. There is probably one waiting for him in Raftel.

Luffy in his 2 year timeskip had to invent a technique like Kong Gun to subdue much much smaller eliphants and other creatures.
So it's reasonable that Zushina is just a really strong animal yea.. Also we have no proof jack is actually K.O. for all we know he is unharmed.
