Why would he do that that would cause the Uchiha to be targets and bring shame upon the whole uchiha clan doing what he did was smart plus he wouldn't have been able to take out all of those shinobi including Hiruzen Danzo the anbu and more

It would mean more casualties since Uchiha were just 1 of many clans who made up Konoha. Itachi didnt want more casualties. Actually thats why he did kill the ones who wanted to bring destruction on the village, because he didnt want the village to be destroyed and all those people killed.

Arguably one of the smartest people in the manga and his partner thought about Itachi when taking in account the possibility that the soldiers were under a genjutsu, its just that the area (multiple battle fronts in different countries and horizons) was too wide and they had tens of thousands of soldiers.

Seeing as Konoha's own population its most likely less than that and the people concentrated into just 1 village, so the area being smaller, it wouldn't be unrealistic to say that Itachi, even more the perfectly healthy version, could make the scenario you mentioned a reality and put the rest of population/soldiers under a 3-tomoe or even just finger genjutsu, or maybe a combo.

I was a little bit in this scenario and I got an idea how he could have taken the whole village out.

Itachi would use KA on Hiruzen, so he could control him willingly, without using much chakra. Imagine Itachi fighting alongside Hiruzen.

This scenario is kinda real and effective, to be honest.
