Really makes you wonder why Law didn't do that when he and Luffy were fighting Doflamingo and Trebol. Law doing that is not as easy as you make it out to be.

But if Oda clearly portrays Doflamingo > Law who are we to decide Law could actually pull it off in an alternative way?
It's going in against the author his rules

Group fights involving Law always makes me consider his personality swapping ability as a great means towards victory. If Kizaru tries to use Yata Mirror, Law could swap his personality with, say Luffy, while he's stalled, then Zoro attacks his body and Law switches them back as Zoro's sword slices his throat.
Haki blocks Law's cutting ability as hinted by Doflamingo during his final clash with Vergo. He can't do the swap

What does that have to do with Shambles? Doflamingo saying it blocks his cutting ability specifically indicates that this counter doesn't apply to all of the abilities, especially when Doffy knows much of what the Ope Ope can do. Otherwise he would have just said the fruit as a whole, not just the cutting ability.

Why would Oda give Haki a very specific feature like that?

That's differen, Luffy has a natural immunity to Enel's fruit
No such thing is there between Law and Doffy
It's been clearly shown Doffy > Law , ANYONE thinking otherwise is just wanking his the one he prefers

Why are you asking me why Oda did what he did? It was done, nothing we can do about it unless it's retconned.

No, it's not. The point is that just because person A>person B, that doesn't mean person A will always win. Nature of abilities, certain circumstances, etc. all matter.

Doffy>Law? Yes, that can't be currently contested. Doffy defeats Law 100% of the time? That's an entirely different statement.

So if Doffy were to say "my haki can block your punches" we should assume he can't block their kicks? Thats some bad logic. Just because something is specifically said does not mean that anything that wasnt specifically said is untrue. I would say that because Doffy implied that his haki can block even one of laws DF abilities, it should be assumed that it is possible he can block others. This is because Doffys words are actually a hint into haki's nature, not the nature of the Ope Ope fruit. Haki has been introduced as a anti-hax device. It keeps someone from being too OP simply because their DF lets them be. Its a plot device to keep someone like law in check. If it applies in universe it should apply to our vs threads as well.

Kizaru would win in the end.

They might give him some trouble but at their current power level he would still win in the end.

I'd go with Zoro, law and Luffy. Just beacause law's fruit is hax and Zoro and Luffy with law's aid might be able to beat Kizaru at High diff.

Realistically Kizaru would rape them.
