When she can creates something out of her own then i agree.
You must study of what has been written down to understand how poison works or you do experiment/test to see how it works.
That time sakura clearly know how it works, so that mean she had studied it before and apply the method on it.
There is nothin called out of the blue when it come to poison and cure.
