Just how fast is Itachi's shunshin?

You can't judge somebody's shunshin speed when they have no intention to kill in battle or they at their weakest moment in life(itachi's sickness). So we'll never know.
Itachi is the one who had no intention to kill, while kabuto was desperate to defeat itachi, pulling out all the stops.

Note the [!]. There wasn't a question mark [!?] hinting that Kabuto was caught off guard. He sensed and percieved Itachi, yet failed to competely avoid the shunshin strike.
The exclamation point could have been referring to Kabuto's surprise from the bunshin though.
It's more impressive to me that Itachi was able to plant a bunshin without Kabuto noticing.

Your premise is very misguided and biased. You didn't account for the fact that Itachi was caught off guard by a Karasu bunshin - even Sage Mode sensors can be put off guard, as shown by how Kabuto was put off guard by Magatama, thus allowing himself to be nailed by Sasuke's Susano'o arrow > - a Susano'o arrow being the very reference point you were drawing a comparison to. Further proof that Itachi only landed a hit due to Kabuto being caught off guard is that Kabuto reacted in time and stabbed Itachi the first time he tried to blitz (a part which you decided to ignore) and received the blow due to being tricked by a clone, rather than outsped to the point where he couldn't react.

Also, Itachi was going for a more serious strike than just Kabuto's horn, yet Kabuto was still able to react in time to mainly evade Itachi's strike to the point where he only lost a horn.

You didn't, but imo Itachi against Naruto and Bee (specifically Bee) was more impressive to me. A lot of conclusions could be drawn from their battle. Itachi's Shunshin/reaction speed are some of his most underrated aspects.
Well, imo, this one was more significant simply because DSM Kabuto has faster reflexes/reaction then Bee. But I do know what you mean, Itachi did display a lot of overlooked feats during that fight. I'll most likely exploit those next.

Show me at all how that handicapped him in the slightest.
Given how heavily humans rely on sight it should be self explanatory.
I can safely say 5 senses+ sm 6th sense is and always will be superior to 4 senses+ sm 6th sense.
Simple math really.
Another example would be blind madara getting tagged by sasuke. Had he had eyes (and thus 3t) he probably wouldn't have been touched.

Terrible example. JJMadara was effortlessly outsped by RMSasuke later on.

There is no proof whatsoever that Kabuto was handicapped in anyway, outside of fanfiction of course.

Izanami visibly slowed him down combined with the fact that it was canonically stated MULTIPLE times that he wasn't even trying the entire match U_U
what does that have to do anything? Itachi wanted to trap kabuto in Izanami, and if blitz was an option he would have done it

I'm going to break it down and address it for the last time. Take a good look at this manga page [ ]. Top panel Kishi incorporated a [!?] hinting that the Karasu bunshin caught Kabuto off guard. He drops the sword in the disarray of crows, and then in the bottom left panel we are given a [!] meaning it was then that Kabuto sensed Itachi coming towards him and proceeded to dodge; only to get his horn sliced off. This was essentially the same way Kabuto sensed and effortlessly avoided the susano'o arrow. No if, and, or buts around it. Furthermore the sword barely even fell before Itachi grabbed it; displaying how fast his shunshin and striking speed really is.

Again, Izanami slows him down. Besides, he took advantage of the fact that, as an Edo, he could regenerate; physical attacks weren't his concern, especially since Sasuke could help him as well. If he wanted to kill, his speed would of reflected that.

Agreed. Kabuto was fully aware of the strike, but was hit by it anyway.
