Tell me how Jiraiya could have defeated Itachi and Kisame, without having intel on their full abilities? With as much effort as using Amaterasu to escape, Itachi could have used it on Jiraiya. Do you think that Itachi- who one shot Orochimaru, would be afraid of another sannin?

What makes you think they weren't talking about Jiraiya at first, then Naruto, then back to Jiraiya? Itachi mentioned everyone have a weakness after Kisame talked about both of them pale in comparison and we see them using Jiraiya's weakness of Hot ladies. Also do you really think they were talking about Naruto being that much of a challenge when Kisame easily absorbed Naruto's chakra and was about to capture him by cutting off his leg yet this goes against what both Itachi and Kisame said.

Also I guess you forgot the fact that Itachi has the MS which allows him to control Kurama so saying they would all be killed or seriously injured makes no senses since they are both not dumb enough to think a Genin will be in full control over their Bijuu. So either Itachi plus backup will all die or be injured against a Bijuu that Itachi can control or they're talking about Jiraiya who did fight multiple jounin-kage level ninjas (Each Pein body was beating Jounin level ninjas no problem) and each had a different power but had shared vision so fought in perfect synch.

Genin or not, Naruto at that point had just defeated Sabaku no Gaara and Shukaku, who was actually the strongest Suna shinobi and had been unbeaten or even hurt up to that point. Furthermore, Kisame was relying on Itachi's intel about the kyubi jinchuuriki since Itachi was the one from Konoha, and Itachi was feeding him garbage because we all know why, he's a loyal Konoha shinobi. Also, when refering to Jiraiya, notice that Kisame and Itachi compare the TITLES between them and Jiraiya, that the title of SANNIN eclipses that of UCHIHA and SEVEN NINJA SWORDSMEN, in other words, it could have been Tsunade or Orochimaru in Jiraiya's place and the conversation would have been exactly the same. This scene in NO WAY whatsoever proves that Jiraiya>Itachi Kisame or even individually in battle. Only the most die hard Jiraiya fanboys would think other wise, ESPECIALLY after Tobi told us the truth about Itachi.
