A master illusionist without the sharingan and may i say without the byakugan life becomes harder for hiashi. He still yeilds the fastest handseal in the series able to make 3 attacks in 1 move. His speed, reaction time and intelligence are there also. This is a STOMP
Most of his attacks are horribly linear and useless when blind. How does he expect to hurt Hiashi if he can't see him? Kaiten has a ridiculous AoE so Hiashi doesn't have to worry about sight.

Hiashi does not require the byakugan in order to use gentle fist. The point of gentle fist is to cause internal damage, though he doesnt have to attack the tenketsu specifically. He just needs to touch him to either incapacitate him, or kill him.
He has perfect chakra control, decent stamina, and can use vacuum palm for long range attacks and rotation for defense. Hiashi is also a experienced shinobi, he isn't the head of the hyuuga clan for nothing.
Hiashi med diff without hiashi's dojustu his ability to counter behide attacks doesnt go down because of the chakra barrier that surrounds them allowing them to know if something is approching him he would quickly be able to use rotation to stop all long range attacks even in a genjustu

with that useless itachis fighting style demands he use taijutsu, exploding clones and possibly suiton/katons. all of that is EASILY countered by hiashi. heavenly spin gets rid of katon and suiton. and no one will be idiotic enough to try and fight top tier hyugas in taijutsu.
hiashi by hype must have huge chakra levels seeing as how hes respected as the leader of konoha's current most powerful clan. and he should have amazing speed. of his only fights in the manga he has shown to be completely able to keep up with his invincible immortal unlimited stamina brother, and easily stomping a small army of sand/sound chunins with heavenly spin alone. itachi does not know of the spin blindspot and cannot exploit it.
next is MS. as i pointed out earlier, genjutsu is useless. everything itachi has, even finger genjutsu due to the precise chakra control hyugas possess.
amaterasu is countered by either heavenly spin or gentle fist: body blow. neji stated he can emit chakra from any point on his body and blow it forward, destroying the chakra based substance thats in his path, whether it be nigh unbreakable webs or a zetsu.
furthermore, 8 trigrams 64 palm owns susano. hiashi is able to gain incredible speed (even neji was left unimpressed by weightless lee and after the gaara fight, neji was STILL the gennin to beat). susano is a stationary defence and itachi's only real means of offence with feats is the sword. now it doesnt matter if totsuka is out because if it is, it means itachi is out of all other options. its still chakra. an elite hyuga's gentle fist is stated to destroy all chakra substances with a touch. and once itachi loses his susano its over because hiashi blocks his chakra the moment hes able to engage in taijutsu.

Most of hyuuga's power comes from Byakugan. Without it, they cannot have "360 vision", Itachi can just blitz him. They cannot see their enemies' chakra points, they are not half as efficient without the byakugan in taijutsu.
Byakugan are the set of Kaguya's ffs. Why are eyes like rinnegan and byakugan getting downplayed all of the sudden after Sasuke got his 9 tomoe sharingan? This is ridiculous.
Byakugan has many functions, probably more than half of hyuuga's clan members power/strength comes from Byakugan.

Everytime the user has used that technique, the byakugan was "active", as you can see their veins popping out. Not once the byakugan was off. What does that tell you
Conclusion: For every jutsu we know Hiashi can use, he needs Byakugan otherwise he cannot perform them as he cannot hit the chakra points nor he has "near 360 field of vision".

The whole point of Gentle Fist is said in the first spoiler. Without seeing the chakra pathway, they cannot inject chakra into their points and hence cannot damage their organs.
Even if Hiashi does use something like this without byakugan, it would merely be categorized as simple taijutsu from which Itachi can easily escape with one of his clones or shunshin, or even fight with taijutsu, after that stab him or throw some shuriken covered in flames while all Hiashi can do is run like a *****.
All moves that derive from gentle fist(all other Hiashi's jutsus) are going to be low-mid taijutsu level and pretty much useless without byakugan. Itachi low diff once again.
Tough matchup considering they can't use their eyes. The thing is Hiashi wins since he can use Vacuum palm, one blow body and Rotation without the byakugan.

Read about Gentle fist and the byakugan and you'll see for yourself. The byakugan enables the user :
- 360 degrees of vision. 50m(at least) field if vision. There are many more but I'll get to the point.
-See through solid objects, barriers e.t.c
-See chakra flow and nature
Gentle fist can still be used but the byakugan makes it more effective. Gentle fist attacks the tenkutsu points and the byakugan sees it. In order for the tenkutsu points to be hit, the byakugan has to see it in order for it to be hit . So gentle fist can still be used even without the byakugan being able to see those points. Gentle fist is used to hit those points while the byakugan is used to see those points.

Not in the mood to debate Hiashi vs Itachi matchup but I'll tell you this, Hiashi has a 5 in taijutsu which the byakugan doesn't give him. Itachi has a 4. I think it's clear who's superior. Rotation, One body blow and Air wall palm(strong enough to deflect the ten tails hand) would deflect each and every attack Itachi has to offer. Lol they have intel on each other. Why is Hiashi looking at Itachi's finger for?
