The distance is 50 meters, he isn't blitzing her instantly. She will have plenty of time to use boil release (which takes 1 seal)

Fifty meters gives Minato enough time to summon Bunta. If she spews out mist, Bunta slashes through the mist with his sword, or jumps and squashes anything in the mist. Even if the mist has boil release in it, the boil will not "instantly" vaporize the toad nor ftg kunai.

How is a sword slashing a mist that can cover a large AOE away. This isn't ps slash. If he jumps up he gets blasted by water pillar and water dragon. Did I say it will vaporize the toad instantly? The kunai gets melted, it melted sassuno ribs right on contact. Sassuno > kunai. Regardless if he dose teleports by her when the mist is up he will still melt and that includes his eyes. Sensory isn't helping if you can't get close without melting. Bunta isn't getting close.

minato summons ma or pa, they blow the mist away with their fuuton and he blitzes her. Or they torch her with their katon. Or they slice her in half with their water laser.

Or he summons bunta and blasts her with his water canon balls. Or fires off a wave of toad oil and minato ignites it with an explosive kunai.

Or he senses her location with his finger sensing, spams kunai around her and blitzes her with a clone when she gets near one. Or he just FTG's a rasengan into her like what kakashi did with naruto's rasengan.

Mei doesn't stand a chance.

Like i said above it doesn't melt anything nearly fast. Or Minato could just summon Gamabunta to use Gun shot and annihilate Mei. She has no chance of winning.
