. I know Obito twisted a lot of the truth to manipulate Sasuke but there's no reason to lie about the Senju clan, if only Hashirama was stronger than he could have said that but he said and the clan. No Itachi can't beat Hashirama, he can't even beat Obito or Madara who both can't beat Hashirama. If Shisui was so strong then he wouldn't have lost to Danzo then commit suicide.
If you take out Hashirama and Madara out then that leaves Tobirama who killed a ninja equal to Madara. Tobirama and Hashirama fought Madara and Izuna so if the Uchiha clan had more stronger ninjas then they would overwhelm the Senjus but that wasn't the case. When Tobirama killed Izuna, he tipped the power even more in Senju favor and even the Uchihas knew this

. The only reason there's more Uchihas is because Kishi left out the Senjus in all part one but Tsunade and her brother, it could be that they married into other clans but that isn't known.
The Uzumaki clan is part of the Senju clan since they came from the Senju clan some time long ago and the Senju clan came from Ashura lineage so since the Uzumaki come from the same lineage and the Senju were there first, Uzumaki is part of Senju. You can say Hyuuga is part of Uchiha but that's still shakey since it was said the Sharingan came from the byakugan so that would mean the Uchiha is part of the Hyuuga but we know the Uchiha are from Indra lineage so we don't know if the Hyuuga is considered the same or they could be from the Sage's brother; we only know they are from Kaguya's lineage somehow.
Timeline wise there was: Uchiha-Dajima (Madara's dad), Madara, Izuna for ninjas we actually know the name of. Senju-Butsuma, Hashirama, Tobirama. Uzumaki-Mita (who became 9 tails jin and had at least KM since she could sense evil intent like KM Naruto).
Current time: Uchiha- Obito, Itachi, Shisui, Sasuke. Senju-Tsunade. Uzumaki- Kushina (9 tails jinchuuriki with sealing jutsus and chakra chains), Nagato, Naruto, and Karin.
That's the list of fighters that we know of some of their powers, was going to include Shisui's dad and Sasuke/Itachi dad but we only seen them but don't know even 1 of their jutsus. I added Kushina because she's the one who taught Minato sealing jutsus, have chain chains strong enough to hold down full kurama and was Kurama's jinchuuriki.
More Uchihas are know is all but the Senjus known can take out those on the Uchiha list (maybe not Tsunade but Mito having at least KM of full kurama with sealing jutsu seems tough) and the Uzumaki have all strong fighters and 1 healer.
Tobirama said the Uchihas can get stronger with hate and they did
