The main reason is very simple and i thought its obvious but for some people it isnt....
1.Itachi was sick.
2.Count how much death battles Itachi had after he joined Akatsuki.
3.Die in front of Sasuke was the only goal.
4.Plot - Kishi had to make Itachi blid cuz if he would be healthy Obito would be dead.
After Itachi left Konoha and joined Akatsuki he never wanted to fight serious:
a) he didnt fought with Oro at full power
b) he didnt fought with Deidara at full power
c) he didnt fought with Jiraiya at all cuz there was no reason to fight with him
d) he didnt fought with jinchuriki let Kisame do it for him
^^^ This proves he always avoided fights and especally to use his MS recklessly.
Some times he had no choice but to use MS:
a) before Kakashi showed Itachi and Kisame was winning against jounins but against Kakashi he had no choice but to use MS
b) Amaterasu was the only option to escape Jiraiyas jutsu
c) Itachi had to use Tsukuyomi against Sasuke cuz he wanted to make Sasuke hate him even more.
^^^ this proves he only used MS when its necessary
Fight between Sasuke and Danzo showed how fast you can lose your eye sight.
Sasuke had only few battles but those battles was very serious and that was enough to kill the eyes.
Itachi died after he used his MS at full power so this means he only had ONE FIGHT LEFT.
He couldnt fight against Obito full power cuz simply he would die after this.
His plan was die in front of Sasuke not Obito....
