You make good points, even if you didn't take this opening seriously.
Firstly, I'd like to address your claim with Itachi vs Bee's sword. One thing you were right about, Sasuke's and Itachi's handling of Bee's seven sword stance shouldn't be compared and Sasuke's case shouldn't be applied to Itachi's, in both saying Itachi can or can't defend. This is because, while Sasuke was directly engaging Bee, Itachi was on complete defense. Unlike Sasuke, who was attempting to land a strike on Bee, Itachi only attempted to dodge. Sasuke too was able to track Bee's swords with his eyes, but his body was unable to keep up, but I don't need to tell you what that means, seeing as that was the first thing you brought up. If Itachi was attempting to strike Bee like Sasuke was, he would not have escaped without damage.
Snapping Bee out of the jutsu does not take that much time at all. Perception of time withing a Jinchruki's mind is different than how time passes in the real world, as shown with how Naruto converses with Kurama throughout his battle with Obito, but the time that passes in the real world in much shorter than shown. Not only that, but Bee was snapped out of it fast enough to tell Samehada to give him his swords, for Samehada to release the swords, for Bee to grab them and then wield them to deflect the shuriken.
Tsukiyomi would be snapped out at the same rate as the Crow Genjutsu.
