General Grievous would lose to Darth Maul.... Force pull his heart out.
And no, Darth Maul has immunity to lightning in the AU, that's the only thing Count Dooku has against him. While the Count's is more refined; Darth Maul has the power, agility, and brute force to just overwhelm Dooku.

He was just. . A reptile that received a nasty. . Explosion and then manipulated by the CIS and controlling him through irrational hatred... I just don't like him too much. He looks cool, I just. . Don't like him.

It's nowhere near that easy to beat General Grievous. He's beaten innumerable Jedi Knights and I assume a good bit of Jedi Masters.
He solo'd Assajj Ventress and Durge. How many people has Maul killed? Qui-Gon? While that is very impressive, Grievous seems to have a much more fearsome reputation.
And with the good Count, Maul's only thing he has going for him is brute strength.
Force abilities? Dooku
Experience? Dooku
Lightsaber skills? Dooku
Intelligence? Dooku
Strength? Maul
But don't get me wrong. It would be a tough battle either way for sure. Grievous too. I'd honestly say Grievous and Maul are around equals.
At least we can both agree that both Maul and Dooku were thrown away before their time :T_T:

You know who doesn't impress me that much? Darth Vader. Honestly. Anakin was going to become more powerful than Sidious and Yoda, but then lava pit happened... Those cyborg enhancements didn't seem to do much. Plus it cut off his connection to the Force drastically.
Darth Vader is my favorite character, I thought Anakin ruined him. Like, before he was a bad ass in a suit. No "I AM A SAVIOR GONE WRONG" thing. That, and his reasons for falling to the dark side coulda been better. And, it did. He was unable to use a good deal of force moves because of his robotic parts.
But, it was also said that Darth Vader felt the pain of his burns, even through the pain killers he was given through the suit. So. . Every moment of his life is a living torture. I was impressed to find out he could fight when in such pain!
The Black Sun, the group that Sidious thought would give him enough harm he sent Maul to. Maul KILLED the leaders and they never truly recovered to their former power.
Maul had also killed a Jedi Knight, would-be master while developing his light saber. To be fair, he was given two chances. But once he got the double sided light saber he proceeded to win without too much trouble. That, and he defeated some random knight and padawan. I can't remember who.... >.>.
Force Abilities: Dooku, you are right. He was far more skilled in the force. But, Sidious' own master forbid Sidious from learning too complex of force moves. So he would not be a "true" sith. He was raised as an assassin.
Intelligence: Debatable. Maul IS very smart. His Irodinian-nature and prone to violence just blinds his better judgement.
Lightsaber Skills: Dooku WAS said to be one of the best duelests in his prime. But, there is a reason he has a crooked light saber. Arthritis and other such conditions make the Sith version not nearly as good when it comes to dueling. That. and Darth Maul's double sided lightsaber and aggressive attitude when fighting would out maneuver the Sith Lord.
Experience: Dooku takes this easily.
Strength: Maul.
It'd be a tough battle. But, WHEN it comes down to a lightsaber duel, Dooku can't win. And Grievous really just has a bunch of sabers... He's not the best with them. He overwhelms his opponents but is mediocre when it comes to actually fighting with a fair amount.
If Grievous begins to lose limbs, he's basically done. The only advantage Grievous has, other then the added limbs, is the physical strength and agility to evade and escape.
Dooku I honestly didn't like his death. I thought that Dooku, Maul, and Grievous should have been introduced into the first movie and slowly killed off starting with the second one and ending at the final parts of the third film. God. . While I'm not one to, I COULD right a fanfiction better then the triology. . WHILE using adjusted idea's from the first three films..

I'm glad that you didn't bring up the point that Maul is resistant to Sith Lightning. I seriously doubt he truly is. While he can resist forms and doses of it, he only resisted Mighela's lightning, not a true Sith Lord like Count Dooku. Dooku spent the last 13 years of his life learning about the Sith and their forbidden knowledge and gained true power, unlike Mighela.
Anyway, there's not much you can compare when comparing Maul and Dooku. I already gave my main points and stuff :/
It really is debatable and either one can win, but I simply think Dooku would win more times than not. Just my humble opinion.
I really love Count Dooku due to the fact that he's a Count (my favorite royal title), he has a cool planet, he's the leader of my favorite faction, he's elegant, he's considered to be one of the finest duelists the Jedi have ever produced (on the level of Yoda and Mace Windu (He even beat Mace in his prime)), and that he's played by Sir Christopher Lee, a damn fine actor.

And, Darth Maul seems to be the cooler and superior character. he's the dark assassin, trained to be a Sith from childhood. Raised by Sidious himself, he could hardly find it in him to hate his own master. I think we both know it's a custom to despise your Master....
His style and the way he fights is just.. He added in his own Zabarak flow into it! Which I just am stunned at, his double bladed lightsaber is fantastic. His whole style, the hunter, assassin, silent killer... I am just hooked to that more then the corrupt Jedi trying to change the galaxy.
Christopher Lee and the title of Count are cool, I'll give you that.
