He doesn't need to. He can see Sasori's hearth with chakra-vision. So he just has to hit that one target.

The better question is how Sasori is going to defend against the Totsuka and Amaterasu.

Given that he was ultimately tagged by Chiyo and co. several times.

And in terms of speed Susano'o > > Itachi > > Chiyo

Alive Itachi will use Susano'o if he needs it, simple as that. And as that scan shows clearly, he'll essentially never need it for an extended period of time because Susano'o is lightning fast. Itachi himself can't dodge Susano'o hands, and Itachi is easily Akatsuki's fastest in terms of flicker feats.

Even the Kirigakure no jutsu can blind the sharingan and the rinnegan.

It clouds vision because the mis is saturated with chakra. Sasori has no such jutsu.

How can Itachi see Sasori's chakra? I don't understand.

It's been shown that the Sharingan can see chakra through solid material.
