Actually you are right, he can first throw a barrage of weapons like he did against Kakashi, forcing her to move out of the way and then follow up with a katon. After that, he could catch her off guard and stab her with a kunai.

So all in all, CE Sasuke beats her low difficulty, pre CE Sasuke wins mid difficulty and bell test Sasuke wins high difficulty.
