Just because you haven't seen it docent mean it hasn't happen in the past. The Manga started years after the Massacre with only a few flashbacks to the Uchiha past. Add to this Kishi has never gone in deep not only about Uchiha females but females as a group of any kind only individual women. Except for Hinata in the Hyuga Clan we have not seen other Hyuga Females use their Eye power either.
