Well Zamasu is obviously not purehearted.
I think he is messing with the tea and is deceiving the yellow kai.
Probably to get his hands on the rings and earrings.

But as soon as he asked that the tea started to act funny, swirls and stuff like that
That's why he let Zamasu fight Goku cause he saw how the tea acted and he was hoping the fight with Goku would make things better

I think he just wants to destroy mankind becuase he is suffering by seeing them killing each other (war).
He wants to end it once and for all becuase nothing will stop.I think he has too much compassion.

The tea is yellow kais way of confirming if one has a calm heart he comments on this in the episode the yellow kai however is unaware zamatsu appears to have a way to surpress his cold heart as commented by whis this means the tea may not be as effective as yellow kai thought imo yellow kai in the future is deceived by zamatsu into believeing he has good intentions he possibly killed him off after getting a time ring
