Well for starters, if Zabuza used his mist technique, Mei could use her boil release. Now neither can see, but Zabuza's mist doesn't burn a person's skin, so Mei will end up winning that fight.

Kakashi said he wanted to assassinate the 4th Mizukage. He can kill someone without even making a noise. He is strong in taijutsu and has great suiton jutsus. I think you're the one underestimating his power or overestimating Mei, cuz i don't see how Mei beats him in the mist. And in taijutsu, Zabuza is stronger than her from what we've seen so far.

I'm sure Zabuza would be able to assassinate Mei if that was his motive because he would ambush her.

But this is a straight forward battle where they are both aware of each others presence.

edo-anything is cheap. If they cannot outclass the ninja living, then the only point an edo would serve is to make the character win not because of power buut because of lack of a sealing jutsu.
