He beat him before he got mangeekyou or lightning cutter. Obviously now he can beat zabuza. The swordsman displayed (except kisame) are also jonin level-chojuro, zabuza. And kakashi is an extremely strong jonin and a hokage candidate.

Kakashi beat Zabuza while having to worry about a guy that WASN'T a ninja, who had no means to defend himself, and three genin.

Yes, two of those three genin turned out to be the most powerful people in Naruto, but at the time they were barely above fodder ninja.

Kakashi beat Zabuza AGAIN as a zombie. He managed to take off his arm, while Zabuza gave him a big-ass cut. In Naruto, unless you can regenerate, no arm=loss. Zabuza cannot do one handed seals like Haku.
