We had this thread the other day. IMO Hidan wins if Zabuza doesn't know his secret.

Hidan's mid range scythe abilities make him more agile and flexible than Zabuza. He goes so berserk with his Soul Hunt that even with the mist and the sneak attack, it's not going to make too much difference because Hidan is so intense and relentless. Zabuza is a great swordsman but I still honestly believe he can slip up and be overwhelmed. The Executioners Blade makes for a very brute and heavy-handed style of fighting but Hidan is fast and has a very flexible blade. IMO, he's getting the blood. It's just if he can set up the ceremony.

he can't see anything, zabuza killed kakashi, had it not been for naruto warning him about the sword strike

With intel i'd say Zabuza.
He'll either cut Hidan in half (head or waist, doesn't matter) or overwhelm him with water clones (assuming Hidan can react to Zabuza while in the mist).
