He teached Haku and knows everything about him anyway, so he'll be expecting the ice mirrors. In order to counter that he can use his water clones and remain outside the 'dome'.
This'll eventually become a kenjutsu/bukijutsu fight which Zabuza wins due to superior speed and skill in cqc.

Not sure if Zabuza's speed is similar to Haku's due to them both being pretty swift. Sure Zabuza knows Haku's moved but he might not know how to react to them as it's not like he taught Haku to use his ice release. I do however think Zabuza would win somehow as the manga and anime makes him Haku's sensei. And because of his large skill with ninjutsu.

Even though Haku seemed incredibly fast when he fought N&S and has the same score in the databook for speed as Haku, the truth is that Zabuza managed to overwhelm Kakashi (an experienced sharingan user) while Sasuke managed to somewhat keep up with Haku as soon as he awakened his sharingan.
Zabuza's silent killing prowess was also said to be unmatched by Kakashi (sorry for not being able to find the link yet), so even if Haku can use it as well he'll still be at a disadvantage.

Yes but each ninja has different traits. Jut because they can't beat one does not mean they can't beat another, as they do not possess the same ability
