The point isn't about Hidan's durability. Its about the fact, how Zabuza can use strategies and tactics which he can combine them with his deadly techniques to gain victory.

Zabuza's intelligence is average, scoring 3 in intelligence. As usual, he starts off with Suiton Bunshin to calculate his attacks. Once Hidan kills the Suiton Bunshin revealing his jutsu, Zabuza analyses it and uses Hidan Mist jutsu. Hidan has no sensory to feel Zabuza's location, so Zabuza takes him out with his Kubikiribōchō and GG U_U.

When he Parry's Zabuza's blade with the back end of the scythe meaning in between the blades, which he can easily do the spikes will pertrude far enough to still impale Zabuza if close enough U_U So he can attack and defend at the same time, making him deadly for other weapon users and which is yet another reason why that fight of his was a complete ass pull, as its not physically possible for Kakashi to parry the scythe without taking damage with such a small weapon U_U

So yeah, that would basically end it for Zabuza as he would then fall back and perform the ritual

Zabuza has to reveal himself when he comes closer, Hidans reactions are above par and all it takes is a slight movement to change the position of the wound from his neck to his chest which he can tank, and thats IF he goes for the decapitation

Kakashi and Hidan aren't on the same tier of speed, plus Zabuza's character was clearly holding him back in that scenario, he could've easily killed the bridge builder instead of revealing his presence.

The point of using the jutsu is to weaken or slow Hidan down, allowing Zabuza to have edge of slicing his head off.
