I will provide you guys explanation from manga that zabuza has sage mode.

Because zabuza saved his senjutsu for last to use it against kakashi and I think kakashi saw that when gato appeared.

what will happen to kakashi if zabuza used his demon sage mode ?
I believe kakashi would lose his head if zabuza activated his senjutsu.
