In regards to Naruto: i'd say Madaras true Susanoo reveal is a favorite of mine.

In regards to other mangas/anime, i'd have to say Legend of the Four Kings transformation of the two youngest brothers: Amaru and Owaru into the White and Black Dragon kings.
