Itachi was an anbu before he left the village but he seems too good for just a jonin. But as a teacher he'll be good, he'll teach you the importance of team work, train your reflexes, use chakra more accurately, etc

With his philosphies and ideaologies being passed on to futher generations would be very helpful to the future ninja world, considering he was a pacifist and his students would most likely take on his ideaology as most students do with their mentors.
