I'd be really surprised if it didn't. After all, it'd be weird for nine entities, which seem to be fairly intelligent (Aside from the Shukaku maybe :|), to merge into some animal with no personality.

It's completely out of Kishimoto's writing style to make a character completely arbitrary. Something triggered Juubi to attack humanity, must've been pissed

Well of course, isn't anything a personality? Perhaps the Jubi will have the personality of pure, unstoppable evil. Cannot be reasoned or bargained with, not even after the battle is over. Which is why I think the Jubi is going to reject anyone who decides to seal it so they could be a jinchuriki.
