It's not that simple.

It all depends on the Inheritance of Kekkai Genkai.

If all children born to any 1 Uchiha parent -(Like Salada, 1 Uchiha, 1 Haruno)- always inherit the Kekkai Genkai then as long as Sasuke and Sakura have a boy, the Clan won't die.

Kishi never explained this, we don't even know if all the previous Uchihas were born from 2 Uchiha parents.

If my above statement was true, and SS have a boy who gets the Uchiha KKG then as long as he gets a male offspring and so on the Uchiha Clan will continue to expand, but you will also have non-Uchihas with the KKG like Salada's children. Unless:

It's common in Japan to take the name of the more prosperous family whether its the father's or the mother's.

I would think that the Uchiha Clan is always considered the more prosperous due to their special KKG, therefore all of Sasuke's offspring and their offspring beyond will be strong Uchihas and the Clan will be restored fairly quickly.

I think you are forgetting Sakura orginal moveset would tie hand and hand with a sharrigan .
