Why other Sharingan users never used Sharingan's Jutsue Copying capabilities?

Since the day we found out of the sharingan. We only saw one ninja who made a name for himself by copying other jutsues through it. He is no other than Kakashi himself. Yet for some reason we never really saw other sharingan users use this capability with the sharingan. My question to this is why?

At the time, Madara couldn't use the Mokuton, but now that he has Senju DNA, he was able to use Mokuton because he copied Hashirama's seals for some wood techniques. That's what I think.

They have actual other jutsus that they use which are stronger than ones they could just copy. Their eye techs are dominant so why resort to fodder techs when they can use amaterasu and susanoo?

Yeah I am aware that Sasuke copied some moves for taijutsue. But I would have liked him to use more elemental attacks besides the fire or Lightening moves. It would have made him a versatile fighter like Kakashi. Not saying he isn't one but we would have probably seen more moves besides the same old Chidori, Amatarasu, Susanoo.

If great eye sight of seeing through moves was mentioned time and time again. Than why not the copying jutsue aspect of things?

Not trying to say they need them. But why not use what you have? It could give them more jutsues to work with if needed.

That is true 98% of them are dead. Yet it took a none Uchiha who had a implanted Uchiha eye to show its copying capabilities. Those who had them did not really show it off as much in there fights.

While those are few great examples. Those are just minimum not many. I believe Itachi could have done more than making few bomb Shadow clones and throwing shurikens don't you think?

He could, but his whole arsenal revolves around shurikens and kunai knives.

He's an assassin and will only use moves that are a one shot type.

He doesn't have that stamina to carry out his battles
