Those who are chosen to be Jinchuuriki are simply the ones sompatible for the seal. Most Senju and Uzumaki fall under this category for example.

Another reason for the Uchiha not having been given any Jin's was because the government of Konoha likely didn't trust them.

Your question is all wrong. The Uchihas were part of Konoha, the hidden leaf village. Clans don't have their respective bijuus, villages do. The Hidden Leaf had Kurama, The Hidden Cloud had the 8 tails, The Hidden Sand had the 1 tails.

Other clans? No other villages. The Uzumaki were the only clan in the Leaf that had a jinky.
But you are right, why not? Well let's look at a timeline.
Madara attacks the village with the kyuubi.... Destroy trust between leaf and Uchiha
Mito is dying so they need another replacement... Well still don't trust Uchiha so give to Kushina.
The village is attacked again with the Kyuubi. The village wistefully suspects an Uchiha.
Minato in his vital few seconds of his life seals it in Naruto, so his son can use it for the good of the village.

So when would the Uchiha have time to get the beast?
