Because all Hyuga have byakugan & all Uzumaki have large chakra reserves. Not all Uchiha can awaken sharigan & they probably didn't have knowledge on how to stimulate an awakening.

Wrong. Uchiha is the most feared and famous clan because of Madara Uchiha. Also powers.. well Sasuke, Itachi, Madara, Shisui, Obito, even Kakashi with Sharingan should tell you enough.
