Why Kakashi doesn't copy techniques anymore?

Because all the international criminals and such Kakashi fights now use KKG and high level attacks, not elementals. Honestly I think Kishi kinda forgot about it

Kakashi's nickname is the copy ninja and is well-known over the world for that, but apart from the fight against Zabuza and against Kisame in part1, Kishi never used his copy ability anymore. What's the importance of a nickname if you're not even able to prove it? Do you think that Kishi wanted to limit the functionality of his sharingan on purpose? Or is it plot?

The ensuing battles did not call for him to copy anything.Everyone he fought after that had a secret technique or KKG you can't copy them.

i think that the jutsus are getting OP and kakashi simply doesn't have enough chakra to use them for example what if kakashi copies madara's katon i doubt that he could pull it off because of his little chakra reserve

Most of his opponents since then had KG which he can't copy.And I guess there is a level of difficulty from the jutsus he can copy.

He can just copy the normal justu, not any jutsu with KG ability. And obviously lately he encountered all the doujutsu users and KG users, so he couldnt do much.
