Why does Juubito look scaly/has skin appendages/has spikes on back and front, while Juudara does not? Well, it's because of Senjutsu mastery. Having access to natural energy makes it possible to access Senjutsu. But those that achieve less balance among the physical, spiritual and natural energies gain an animal like appearance.
Only a perfect balance would result in no appendages
Juubi is natural energy. So being the Juubi Jin naturally gives natural energy.
If one has only Yin and Yang chakra, then adding the Juubi would add Natural energy.
But that is the same exact mechanism in which Senjutsu is achieved,( i.e adding the natural to the physical and spiritual energies).
Look at Jiraiya and Naruto. Jiraiya didn't master senjutsu by achieving perfect balance and thus looked partially toad.
Naruto mastered it so he doesn't have as many toad characteristics
Juubito has more Juubi characteristics because Obito's Yin and Yang energies are less than the vast amount of natural energies the Juubi possesses, as expected. So he gained an imperfect senjutsu( or even Sage Transformation as will be explained later).
Madara, whos Yin and Yang energies were already Bijuu level even before the war, and beyond Bijuu level after defeating Hashirama, is expected to have better balance, and hence look more human like.
The better balance, the less animal like and the more human like.
It's clear from Sage transformation that not achieving a perfect balance would cause extra appendages to appear on the user.
Perhaps Obito's case is somewhere in between Sage transformation and Senjutsu, since extra appendages were very prominent in Juubito, but he didn't go beserk or lose control.
So either way, Obito having the Juubi could have resulted in a lesser Senjutsu or even lesser, a Sage Transformation, but in all, Perfect Senjutsu is required for a human like appearance.
