Shukaku was not controlling him against Lee mate, lmao. Even against Sasuke, he wasn't being "controlled". He could still act accordingly, and he didn't take flight. His personality was cold and he was an all round different person, but he was by no means being controlled against Lee. Your example also fails, due to those two never being in such a situation, so we can't determine what form Ay would take. He's been shown to go V2 off the bat, as well as V1.

I like how you took the whole scene out of context here? How did he get there so fast? Um duh the sensor told him where he was and he used his sand nimbus to fly there. If he was there instantly then Mizukage would of been surprise but clearly you want to give Gaara more feats claiming that he is fast.

physical weakness
Onoki's old age has been seen to reduce his physical prowess to a large degree,and thus he can't mainain a prolonged physical showdown. This will result in gaara taking advanntage of this and continously attack him,eventually causing onoki to run out of steam,

onoki's earth release
onoki has powerful earth release techs. However,this is also to gaara's favour,as the medium for these techs(rock) are actually made into sand casually by gaara. This would cause the rock availability to drop rapidly,thus reducing onoki's rock techs to a minimum while boosting availabilty of sand for gaara,and thus boosting gaara's sand techs to the maximum,eventually onoki will be outgunned. Also his weighing and lightening jutsus arent viable as they need physical contact to take effect,and he isnt getting near gaara. Also doing it to normal sand is pointeless,as gaara couldambush and kill him once he is doing that.


dust release
onoki's ultimate jutsu,capabale of turning anything from full susanoos to and island to dust. It however comes with a few problems
1) the user has to stand still and focus it(not surprising seeing as it entails 3 chakra natures)
2) the jnton takes a few secs to do
3y) once interrupted you have to start again.
These 3 problems are perfect for gaara,who would keep on atttacking onoki. Onoki cant afford to stay still at all,he would have to keep moving to evade the sand attackscoming.


conclusion
onoki's physical consttraints which will make it a loy harder to cope with the attacks,as well as the rock techs giiving gaara more sand and his jinton's problem. Gaara takes it mid-high diff.

one of your first lines is a deal-breaker for me, onoki's old age doesn't slow him down like it did with hiruzen. though he does have a back problem (which is sometimes portrayed as merely a joke by kishi), it is impossible to determine when said problem would occur. in fact, it has only occurred ONCE in battle, against muu and the 2nd mizukage. after that, throughout the rest of his fight against the former kages AND throughout the entire gokage vs madara battle, his back was fine.

in fact, onoki's skills have repeatedly been confirmed to be GREATER than when he was in his physical prime, which was proclaimed by deidara (who said he was faster) and others. his experience vastly outclasses gaara's, and has displayed unshakable courage and will.

onoki can defend himself from gaara's sand attacks by either dodging with mobile earth core or blocking with his giant golems. and though it is possible that gaara may turn onoki's golems into sand, such a process takes a a long time and is chakra consuming. even more chakra taxing is manipulating these large amounts of sand, as shown in his fight against kimimaro.

gaara's ability to fly does him little good in this fight, as onoki can fly, and faster at that.

the answer to jinton's relatively short charge time is onokki's rock clones, which he can disperse throughout the battlefield, and have merely one of them use jinton on gaara. if onoki uses the conical variant (which he most likely will, as he uses it more often than the cubical variant, which has a limited structure and blast radius), onoki destroys anything standing in his way, including gaara, as well as defending himself from any attacks as long as he sustains the jutsu. this is proven when onoki destroyed the flower tree world and there was a 360 degree effect in a wide radius, even though the beam only shot in a single direction. this implies that a certain radius around the physical jinton beam also is lethal, which (coupled with its great speed) makes it nigh impossible to dodge.

conclusion: onoki's stamina and skills have only improved since he was in his prime. gaara turning the golems into sand is a largely useless feat as by the time he will have grinded the stone into sand, the golem's defensive purpose will have been fulfilled and onoki can simply create more. rock clones surround gaara in mid-air, and a conical jinton ends the fight HIGH DIFFICULTY

onoki is eighty something,you are telling me he can fly around the way deidara did continously?.
Rock golems get turned to sand,and in order to use the rock golems and moving vore,he will have to be on the ground,which means gaara can kill him much quicker,earth moving core will save him how exactly?
Gaara's sand making abilities take a very short time,it didnt take him up to a minute against kimimaro t upturn the entire forest,and gaara was 13 when he fought kimimaro,he already fought for 2 days straight,and controlled huge amounts of sand against deidara
gaara's flight means onoki cant escape by flying,and actually gaara said he himself was faster than onoki.
Gaar was able to get inbetween muu and onoki before muu could completly charge his jinton,so to gaara,it is slow onoki needs to stand still. Turning rock to sand takes no effort,and gaara can attack onoki while simultaneously doin so,as we sw with kimimaro,also gaara can make karura structures too,the size of onoki's rock golems,and one thing about gaa's own is that they actually reform easily.
Gaara has far more chakra than onoki,and can make clones of his own,onoki's rock clones cant use jinton,as onmoki himself can only use it about 2 or 3 times,and dividing his power would mean the clones cant use it, they have never shown it either.
Sensor sand also means gaara knows the real one,and can just have sand clones handle the fakes.
