There's a lot of reasons I like Hinata.
1) She reminds me a little of myself, personality-wise at least. That was the first thing that drew me to her when I first saw her as a kid. I like quiet, shrinking-violet type characters, because I'm somewhat shy and not very socially apt, and it's interesting to me to see how characters like that develop.
2) She embodied what I wanted to be someday. Around the time when I really started watching Naruto, I didn't like myself very much. I wished I was better than I was, basically, and seeing Hinata's fight with Neji for the first time, and her resolve to better herself and fight to become stronger resonated with me and made me like her that much more.
3) She's beautifully designed. With a preference for Part 2 Hinata over Part 1 Hinata, even though I like them both. I always thought Hinata was one of the best-designed characters on the show, appearance-wise along with Ino, Kurenai, and Neji. I wish I could say Hanabi, too, but I didn't like her design until The Last. It's mostly in the eyes. In general, I like the subdued simplicity of Hyuga eyes, and how they can go from gentle and serene to frighteningly intense in a moment's notice. I liked Hinata's style more in Part 2 over Part 1, as well, but it's mostly the face and the eyes I look at when it comes to anime characters.
4) Her story is sympathetic, without being overly grim and dark like someone like Sasuke and Itachi's stories (not saying they're bad stories, by the way). I liked how down-to-earth Hinata's struggles were. She didn't have any lofty ambitions, she wasn't driven by the darkness in her heart. She simply wanted to better herself, to the point where she could be acknowledged, and she could be come out of her shell and be brave. I wish at some point in the manga, we could have seen her abandoning her jacket or something, just to drive that goal home. That would have been an awesome moment for her. Her character design change in The Last, a little bolder in style, and sans a big jacket, is adequate, though.
I've always liked Neji, too, for many of the same reasons. Their fight in the Chunin Exams, hearing what both of them had to say to each other, even though they were like opposite sides of a coin, made me like their characters more than most other characters in the NV.
